Toulouse star Servat underwent an operation on his left knee on Friday and will now miss the start of France's preparations for the World Cup.
Servat has been told he faces two months on the sidelines, although he will be fit for the trip to New Zealand.
Fellow hooker Szarzewski is also expected to be given the all-clear for the tournament - which kicks-off on September 9 - despite still recovering from an Achilles operation in February.
