It follows a dismal start to the season that has seen Sale lose all four league games and collect just one point. They are currently bottom of the Premiership.
Club chief executive Steve Diamond will assist rugby director Bryan Redpath in preparing the squad until a replacement forwards coach is appointed.
Diamond said: "Our results have been poor so far and we decided that we needed to change the coaching structure within the club.
"We have started the process of finding a replacement to coach the forwards.
"While that process takes place I will be assisting Bryan Redpath prepare the players for the foreseeable future.
"I would like to place on record my thanks to Steve Scott, who has worked hard in his role and always given 100%. I wish him all the best in the future."
Sale opened the season with a heavy defeat against Exeter before losing to Saracens, Harlequins and latterly newly-promoted London Welsh.
Scott joined Sale in December 2010. He won 11 caps for Scotland, making his debut against New Zealand in 2000.
Prior to linking up with Sale, he was part of the Scotland national team coaching staff, which included acting as forwards coach for Scotland A.
Sale, whose pre-season recruitment included signing former England fly-half Danny Cipriani and current Scotland second-row star Richie Gray, had hoped for a strong start under Redpath's direction.
But they are already three points adrift at the Premiership basement ahead of visiting Bath next Saturday and then hosting Leicester six days later.
Speaking following the 29-19 home defeat against London Welsh two days ago, Redpath pulled no punches after his players were booed off at Salford City Stadium.
"I can understand the frustration and accept it, but we have to take that responsibility when the fans booed us off the pitch and that is something we obviously never want to happen again," he said.
"I apologise to every Sale supporter. They pay good money to watch, and I will be doing my utmost to rectify that."
